A Regular Paula Deen (Hold the Butter, Extra Cheese)

We should get something straight right off the bat: I'm not exactly what some may call a "Suzy Homemaker". I'm more like a "Suzy Let's go to the cafeteria and get some breakfast pizza so I don't have to cook anything" or a "Suzy No more clean underwear? Guess it's time to buy more underwear because I'd rather die than do laundry today". But I have decided that it might be nice to learn how to make some things myself, so that once I'm actually living on my own, I don't decide that living on a diet of Crunch Berries and strawberry Poptarts would be an excellent idea.

Side note: there was an extended period of time in my life where I insisted that strawberry Poptarts were my favorite food. I have since matured.

So when the campus ministry that I'm involved in, InterVarsity Christian Fellowship, put on an end of the semester Potluck, I decided to sign up to bring a Main Dish. It was daunting, but also exciting, and I knew exactly what I wanted to make: my mum's Fiesta Bake. And it goes a little something like this...
Brown a pound of ground beef with a cup of diced onions. Add taco seasoning, a quarter cup of water, and 2/3 cup salsa. Let it simmer for 5 minutes.








Spoon the meat into an 8 by 8 in. square pan. Top it with a can of whole kernel corn and a 4 oz can of sliced black olives. The original recipe calls for two cans of olives, but those things gross me out. They smell like piss and vinegar. Moving on...



Prepare a box of cornbread mix as directed (15 oz is a good size). Add a cup of shredded cheddar cheese (or in this case 4-cheese Mexican blend...it seemed fitting) and a 4 oz can of diced green chiles.

Spoon cornbread mixture on top of the meat. Bake in a pre-heated 350 degree oven for 30-35 minutes or until cornbread is lightly brown.









 Okay, so due to the fact that I'm a novice at this whole food blogging thing, I forgot to take a picture of the actual finished product. But I assure you it looked grand, and I found a picture on Google that I think looks pretty similar:

















All in all, I'd say the experiment was a success. Or at least my roommates thought it tasted good.
